The Progress menu: noodles, trout or half duck

Seaweed noodles list brown butter, mushrooms, dashi and bonito. Fried trout pairs fish with nectarine–Thai chile fish sauce and toasted jade rice. Half duck has peanut fried rice and smoked chile vinegar. Compare the named accompaniments as well as the main ingredient.

Only these noodles, trout and duck. Wider saved seabass-in-brodo Chinese changes shelling beans to beans in pods; excluded here, still in the destination. Full recipes and labels unverified. English, Chinese and Spanish saved descriptions available.

Keep bonito, fish sauce and peanut rice in view

Compare the accompaniment with the central ingredient.

Mushrooms, tomato-kale dashi and bonito

Brown butter seaweed noodles

Both sources name oyster mushrooms, tomato-kale dashi and bonito with the brown-butter noodles. Seaweed does not make this a fish-free choice: bonito is explicitly named. The short listing does not establish the whole dashi recipe.

Nectarine–Thai chile fish sauce and jade rice

Fried whole trout

The sample menu pairs fried trout with nectarine–Thai chile fish sauce and toasted jade rice. Preserve whole as the menu’s wording, without inferring portion size or a boneless preparation.

Peanut fried rice and smoked chile vinegar

Barbecue half duck

Both sources list half duck with peanut fried rice and smoked chile vinegar. Peanuts belong to this named rice accompaniment; the listing does not quantify heat or certify the full recipe.

Choose the main food and its accompaniment

Noodle ingredients, trout sauce and duck rice lead to different questions.

  1. 01

    Choose noodles, fish or duck

Start with the central food, then retain the accompanying bonito, sauce or rice when comparing.

  2. 02

Read the rice as part of the dish

Trout lists toasted jade rice; duck lists peanut fried rice. Do not swap the two in your interpretation or assume substitutions are offered.

  3. 03

    Confirm the recipe details

Ask about fish in the noodle preparation, peanuts with duck or the trout preparation when those affect your choice. This guide does not certify dietary labels.

Before choosing

Are the seaweed noodles fish-free?

Bonito is named in the restaurant’s list. Confirm the full preparation rather than relying on the seaweed wording.

Do trout and duck have the same rice?

No. The listed trout accompaniment is toasted jade rice; duck has peanut fried rice.

Why exclude fish in brodo?

The saved seabass entry changes shelling beans to beans in pods in Chinese. That internal wording remains in the destination. The current sample uses tuna instead of seabass; a seasonal species change alone does not prove the earlier fish was wrong.
