Balthazar menu: decide beyond steak or seafood

Steak Frites comes with maître d’ butter; Petit Steak lists Béarnaise. The seafood choices range from the oyster bar to Seared Salmon with hazelnuts. Choose a preparation first, then look at the accompaniments.

Three decisions hidden in familiar names

These comparisons use listed ingredients. They are not a popularity ranking or a tasting review.

Butter or Béarnaise with your steak

Steak Frites or Petit Steak

Both names lead to steak and fries, but the official dinner menu lists maître d’ butter for Steak Frites and Béarnaise for Petit Steak. If sauce is what matters to you, compare those before choosing. Do not infer a specific cut or serving size from the short names.

Hazelnuts and mustard, or walnuts and lentils

Seared Salmon or Grilled Trout

Salmon lists broccolini, toasted hazelnuts and whole-grain mustard sauce. Trout lists a warm spinach, walnut and lentil salad. This is a useful contrast between accompaniments, not just two fish species. Neither is a nut-free assumption.

Vegetables and cheese, or bacon and egg

Balthazar Salad or Frisée aux Lardons

Balthazar Salad lists green beans, asparagus, fennel, avocado, ricotta salata and truffle vinaigrette. Frisée aux Lardons instead lists bacon-shallot vinaigrette and a soft-poached egg. Choose the ingredient combination you want; the word salad does not mean meat-free.

Narrow your Balthazar dinner order

Use the menu’s preparation and sauce distinctions to make a shortlist.

  1. 01

Separate raw starters from cooked mains

Salmon Crudo and Steak Tartare belong to a different preparation direction from Seared Salmon or grilled chicken. Ask about preparation when raw foods do not fit your preferences; citrus dressing is not a guarantee that seafood is cooked.

  2. 02

Check what the fries bring with them

The official dinner menu says its French fries are cooked in peanut oil. This affects Steak Frites, Petit Steak and Moules Frites as well as a separate fries order. Discuss ingredients and preparation with staff before ordering if this matters to you.

  3. 03

Choose an individual dish or the sharing section

Whole Free-Range Chicken and Côte De Bœuf appear under Plats Pour Deux. The chicken also lists smoked bacon; the beef lists onion rings and Bordelaise sauce. Confirm the serving arrangement rather than assuming every main uses the same format.

Questions before choosing Balthazar dishes

Is this Balthazar’s full current menu?

No. It is a dinner-focused guide to selected dishes in the September 10 capture, checked against the official dinner page October 3, 2026. Other services and same-named restaurants are not combined here.

What is the difference between steak frites and moules frites?

The protein changes from steak to mussels; both names include fries. The dinner page gives Steak Frites a butter accompaniment but does not publish a complete Moules Frites sauce recipe. Ask rather than importing a generic mussel recipe.

Can I choose a seafood platter from this guide?

The saved menu and official dinner page list Le Grand and Le Balthazar but do not provide a complete current platter composition. Ask which seafood is included and how it is prepared before selecting one.
