Fox & the Knife menu: choose pasta and accompaniments

Wild boar, clams, salt cod with crab, or parsnip with blue cheese? The pasta name is only the start. Compare the sauce and accompaniments, then choose bread and vegetables that add something different.

Three comparisons before choosing pasta

Starting points based on named ingredients, without tasted favorites or portion claims.

Choose the protein and sauce together

Wild boar or seafood pasta

Bolognese names wild boar, thyme and Parmigiano. Vongole combines clams with saffron and tomato butter. The ravioli preparation names both salt cod and Jonah crab, with tarragon. Choose among those combinations rather than assume a familiar pasta name tells you every ingredient.

Two distinct dairy combinations

Parsnip tortelli or bucatini

Pastinaca is parsnip: these tortelli name balsamic brown butter, hazelnuts and blue cheese. PePe e Cacio uses bucatini with goat butter and pink peppercorn. If blue cheese or nuts changes your choice, read past the root-vegetable name.

Fish seasoning, dairy and nuts matter

Vegetable starters with different accompaniments

The broccoli lists colatura, an anchovy-derived seasoning, alongside white miso and migas. Swiss chard comes with burrata and walnut vinaigrette; endive with Asian pear, Parmigiano yogurt and pistachio. These are different choices even though all lead with vegetables.

Make the rest of the order fit your pasta

Use the bread, starter and main accompaniments to choose a different combination.

  1. 01

Choose bread by what comes with it

Gnocco Fritto is fried dough with mortadella. Taleggio Stuffed Focaccia also names mozzarella. Piatti di Emilia adds prosciutto and Parmigiano to tigelle, with apple butter and balsamic vinegar. Compare the meat and cheese combination before adding bread alongside pasta.

  2. 02

Separate tartare from a crispy pork option

Carne Cruda Crostini explicitly names steak tartare, with leeks and Parmigiano. Milanese di Maiale names crispy pork, saffron aïoli, mustard greens and pickled cherries. The menu marks several proteins as raw or undercooked; confirm preparation if that affects your choice.

  3. 03

    Read the main dish’s accompaniments

Chicken comes with sumac, escarole and rosemary brown butter. Salmon names asparagus and creamed Tuscan kale; hanger steak has Parmigiano street corn and chili aïoli. If you want to vary a cheese-rich pasta, compare these additions rather than select a main by protein alone.
