SeEat restaurant guide
Pagu menu: bao, noodles or paella?
Pagu’s menu moves between Japanese, Spanish and Taiwanese influences. Start with the format you want, then read the filling and sauce: a green pea bao, pork-or-mushroom noodles and duck paella lead to different orders.

Three decisions inside the Pagu menu
Compare the named ingredients and format. These are preference-based starting points, not ranked favorites.
Peas and papaya, rather than pork
Green Pea Bao
The menu pairs green peas with pickled papaya and Thai basil alioli. Braised Pork Belly Bao instead names pork, pickled cucumbers and candied seeds. The green pea entry is marked vegetarian, not vegan; confirm the alioli and any modifications.
Choose pork or mushrooms explicitly
Spicy Knife Cut Noodles
The official entry offers pork or mushrooms with sherry vinegar, chili crisp, scallions and fried shallots. Say which option you want. Guchi’s Midnight Ramen is a separate choice with pork belly and a six-minute soy egg, not the mushroom version of this dish.
Vegetables with herb alioli
Veggie Paella
This rice entry names turmeric, piquillo pepper, peas, mushrooms and green beans. Duck Paella instead names confit duck leg, shiitake, peas and Sichuan peppercorn. Choose the vegetable or duck direction deliberately; do not assume identical seasoning or a vegan preparation.
Choose format, then filling and preparation
Use these comparisons to narrow the order before asking staff about quantities and timing.
01
Separate cold fish from cooked fish
Japanese Hamachi Crudo is raw yellowtail with lime, tamari, fish sauce and Thai chili. Miso Roasted Black Cod is a roasted choice with pea puree, koji corn and wood ear mushroom. Black Cod Croquetas are a third, different format with Thai chili alioli.
02
Decide whether you want to assemble your food
Roasted Big Eye Collar comes with nori, sushi rice and accompaniments for building handrolls. Suckling Pig comes with bao, pickles, kimchi and several sauces. These are different assembly directions; the menu’s named serving options do not establish how much your table needs.
03
Read the sauce as part of the choice
Patatas Bravas names Thai chili alioli and mojo verde. Green Pea Bao also includes alioli, while Shio Koji Roasted Corn names feta as well. Vegetable names alone do not identify every ingredient; confirm dietary requirements with staff.
Before ordering Pagu
Does Pagu still list squid ink oyster bao?
The dinner PDF currently linked from the official site and the September capture list pork belly and green pea bao, not squid ink oyster bao. The homepage image and older PDFs do not prove current availability. Ask the restaurant before planning around it.
Are the knife-cut noodles always pork?
No. The linked dinner menu explicitly offers pork or mushrooms. Specify the choice and confirm any dietary modifications rather than assume the mushroom option establishes the whole recipe.
Is this the complete current menu?
No. This guide selects examples from a dated capture and a reviewed official PDF. The PDF’s June label, September capture and September 30 review are distinct dates. Availability and ingredients can change; confirm them directly.
