Pammy’s menu: choose between three pasta directions
Lumache pairs Bolognese with gochujang. Mafaldine lists tripe and labneh. Saffron Gnocchi combines clams with guanciale. Start with the ingredients you actually want, then look beyond the pasta name.

Three pasta choices, three ingredient combinations
These are starting points based on listed components, not tasted favorites or a popularity ranking.
Bolognese with gochujang
Lumache
Choose this direction if Bolognese appeals to you and you want to explore its gochujang pairing. The menu does not state the heat level or complete sauce recipe; ask rather than assuming it will be mild or intensely spicy.
Tripe, garlic chili oil and labneh
Mafaldine
The ingredient decision here is tripe as well as pasta. Garlic chili oil and labneh distinguish it from Lumache’s Bolognese pairing. If tripe is outside your preferences, another pasta is a clearer starting point.
Clams and guanciale together
Saffron Gnocchi
This is the clam direction, but the official list also names guanciale. Do not read it as a seafood-only dish. Discuss the preparation if you avoid pork, and do not assume the restaurant can remove any ingredient.
Build your three-dish shortlist
The reviewed reservation format lets each person choose three dishes. Confirm the format and which dishes count before ordering.
01
Choose by sauce and animal ingredients
Compare Bolognese/gochujang, tripe/labneh and clams/guanciale. Raviolo al Uovo offers another combination: crab with veal jus. A pasta title alone does not tell you the full animal-ingredient profile.
02
Look beyond a vegetable name
Chilled Corn Soup lists poached shrimp and squid. For a different seafood combination, Black Bass Crudo lists peas and mint oil. Check the preparation rather than treating corn soup as a vegetable-only choice.
03
Make dessert a separate question
Sweet Corn Ice Cream lists strawberries, pistachio and black sesame cream; Chocolate Torta lists hazelnut and banana ice cream. Ask whether dessert is included in your chosen format instead of assuming it is one of the three dishes.
Questions about Pammy’s menu
Is Pammy’s menu à la carte?
At review, the site describes a three-dish choose-your-own menu for reservations and an à la carte version in the bar/lounge. Confirm your dining format; the guide does not promise identical availability everywhere.
Are these the current dishes?
This preview refers to the saved September menu. Two entries differ from the reviewed official sample. Shared dishes are used for comparisons, but every example still needs current availability confirmation.
Is the Sorbetto dairy-free?
The official sample names Sorbetto without disclosing its ingredients. This guide cannot confirm a dairy-free recipe or dietary safety. Ask staff about the actual preparation.
