Ramen DANBO menu: choose the broth family first
Classic, shio, miso and negi-goma appear in both regular and vegan sections. Choose that section first: the regular family uses tonkotsu broth; the vegan family uses its own vegan broth base. A repeated flavor name does not mean the same bowl.

Three choices before customizing
Choose the section, flavor and additions separately.
Base flavor or two-miso blend, within your chosen section
Classic or miso
Classic names the section’s broth base; miso lists a blend of two Japanese miso types. Choose regular or vegan first, then compare seasoning. Miso is not a third independent guarantee of meat-free broth.
Salt-umami seasoning or sesame and scallions
Shio or negi-goma
Shio is described as gentle salt-umami seasoning. Negi-goma lists sesame oil, roasted sesame seeds and fresh scallions. Sesame is an explicit component of negi-goma; the menu’s richness adjustment excludes this flavor.
Regular pork topping or thick-fried tofu in the vegan section
Pork topping or atsuage
Extra chashu appears in regular toppings and extra atsuage in vegan toppings. Ramen egg also belongs to regular toppings. Choose the full section and additions together rather than adding an egg to a vegan-labelled plan unnoticed.
Customize with distinct controls
Do not confuse firmness, thickness, richness and heat.
01
Separate noodle thickness and firmness
The primary offers thin or thick noodles and a separate firmness choice. Thin is a shape choice; soft is a cooking preference. They are not one control.
02
Separate broth thickness and richness
Broth thickness has light, standard and strong choices. Richness controls lard in the regular section and white sesame oil in the vegan section, with negi-goma excluded. Light broth does not automatically mean no added fat.
03
Distinguish two heat choices
Karadare sets the amount of umami spicy sauce; Rekkarise adds ichimi togarashi powder at a selected level. Check the intended adjustment instead of assuming one word describes all heat.
DANBO menu questions
Is DANBO shio ramen vegetarian?
The flavor name alone cannot answer that. Shio appears in both regular tonkotsu and vegan sections; select the intended section and confirm additions.
Does strong broth mean firmer noodles?
No. Broth thickness and noodle firmness are separate options on the primary menu.
Can the saved menu guarantee today’s complete options?
No. It is the September 10, 2026 capture compared with the October 3 Seattle primary. Ginger is identified as seasonal; confirm current options and any dietary requirements.
