Taberna de Haro menu: choose the rice, then contrast the tapas

Start with the three rice directions, then choose tapas that add a different texture or ingredient. Names such as vegetable, mushroom and clam do not describe every component.

Three rice directions

Compare the saved ingredients, not a ranking of favorites.

Chicken, chorizo and shellfish

Paella Mixta

Choose this direction when you want the mixed meat-and-seafood combination. Check the stock separately; the reviewed official recipe names shrimp stock.

Vegetables and vegetable stock

Paella del Jardin

This is the explicitly vegetable-stock direction. The current list offers chicken or choricitos additions, so the final order depends on additions as well as the base name.

Squid ink and alioli

Arroz Negro

Compare this with Mixta if squid is the seafood you want to center. The saved entry also names shellfish stock and alioli; the black rice color does not tell you the full recipe.

Choose tapas around your rice

A useful combination adds contrast rather than repeating the same main ingredient.

  1. 01

Decide the stock before the topping

Mixta names meat and shellfish; Jardin names vegetable stock; Negro names squid and shellfish stock. The reviewed current Mixta uses shrimp stock rather than the saved chicken stock. Ask which version is being served.

  2. 02

    Look for an ingredient contrast

After a seafood rice, compare Pan con Tomate or a vegetable-named tapa before adding another seafood dish. Read the accompaniments: Espinacas names pine nuts, while Setas includes an egg.

  3. 03

Do not stop at the seafood name

Almejas combines clams with chorizo, and Txistorra con Brandada pairs sausage with salt cod. These cross meat and seafood categories, so ask about the whole plate.

Questions about Taberna de Haro

Does a vegetable name mean the tapa has no animal ingredients?

No. Setas includes an egg, while Berenjena names housemade cheese and honey. Read the whole entry and ask staff about your needs.
