Frederick’s Menu: Fish Sauces, Starters and Vegetable Choices

Frederick’s saved menu makes its differences in the accompaniments: cod comes with chorizo, halibut with a sake butter sauce, and scallops with cauliflower and walnuts. Read those combinations before choosing a familiar protein.

Three useful ingredient contrasts

Selected saved examples, not today’s complete menu or a favorites list.

Spread and toast

A savory parfait, not a dessert

This saved starter pairs mushroom parfait with plum and cherry relish and chargrilled toast. Choose it for a savory spread with a fruit accompaniment, not a sweet cream parfait.

Two fish preparations

Cod includes sausage; halibut includes butter sauce

The cod names mash, baby chorizo and cavolo nero. The halibut names bok choy, broccoli, pine nuts and sake beurre blanc. Compare the whole combination, especially if avoiding meat or a rich sauce.

Florets, purée and nuts

Scallops with two cauliflower textures

The saved dish lists turmeric cauliflower florets and purée with pomegranate and walnuts. Those accompaniments offer a different choice from simply ordering a plain scallop dish.

Choose the accompaniment as well as the main

Sauces and toppings change what you are ordering.

  1. 01

    Check vegetable dishes for cheese

Aubergine parmigiana lists cheese and tomato sauce; torched goat’s cheese on toast makes cheese central. Seared tofu with pearl barley is a separate saved example, not a substitute guaranteed for every dish.

  2. 02

Keep raw and cooked starters distinct

Angus beef carpaccio is described as raw sliced beef. Salt and pepper squid is described as crispy. Choose the preparation you want and ask about any uncertainty.
