On a menu, roasted means cooked by dry heat in an oven, or turned on a spit near the fire, until the outside browns.[1] Culinary textbooks treat roasting and baking as one oven method, and roasting is the usual word for meat, poultry, fish and vegetables.[1] USDA calls roasting the recommended method for tender meats, cooked uncovered by the indirect dry heat of an oven.[2] The browned crust, and the sweeter taste of roasted vegetables, come from the Maillard reaction, which boiled or steamed food does not go through.[3] Expect crisp skin or crust and carved, juicy meat, with no spice unless the seasoning adds it.

What to order
- Peking duck: the bird is hung and roasted, traditionally in a clay oven, until the skin is very crisp, and it is usually served in courses: the skin with hoisin sauce, scallions and thin wheat pancakes, then the meat with vegetables, then a soup made from the bones.[4] Ask which courses are included and how many people one duck feeds.
- Gyros and other spit-roasted meat: gyro meat, typically lamb, beef, pork or chicken, is roasted on a vertical skewer and shaved off in thin, crisp slices, usually served in pita with tzatziki, a yogurt sauce.[5] Ask which meat the kitchen uses.
- Roast duck or goose: these birds carry a lot of fat under the skin, which cooks prick or score so it renders out during roasting.[2] Expect rich, dark meat; one portion is often enough with a lighter side.
- Roast chicken, porchetta or a carved rib roast: ask whether the dish is a single portion or a whole bird or roast meant for the table, and whether it comes with gravy or pan juices.
- Roasted vegetables: dry oven heat browns them and gives vegetables such as broccoli a sweeter flavor, which makes them a good side or a meat-free main.[3]

Frequently asked questions
Why is roast beef, lamb or pork still pink inside?
USDA guidance for whole beef, pork, lamb and veal roasts is a minimum internal temperature of 145°F (63°C), measured with a food thermometer, followed by a rest of at least three minutes before carving, and it notes that people may choose to cook meat further for personal preference.[2] If you prefer your slice more done, say so when you order.
Can roast chicken or duck look pink and still be cooked?
USDA's roasting chart lists 165°F (74°C) for whole chicken, duck and other poultry, checked in the innermost part of the thigh and wing and the thickest part of the breast.[2] USDA also notes that cooked muscle meat can stay pink even after reaching a safe minimum internal temperature, so color alone does not show doneness.[6] If a piece looks underdone to you, ask the server rather than guessing.
Why might a whole roast need advance notice?
Large roasts take a long time: USDA's planning chart, for example, gives roughly 23 to 30 minutes per pound at 325°F (about 163°C) for a bone-in beef rib roast.[2] A whole bird or large roast may therefore be cooked ahead and carved to order, or need booking in advance, so check before you plan a meal around it.
Which roasted dishes come with hidden allergens?
The roast itself is usually plain, but what comes with it may not be: Peking duck is eaten with wheat-flour pancakes, and gyros with tzatziki made from yogurt.[4] Wheat and milk are among the major food allergens in the US, and most restaurant food is not allergen-labeled, so ask about wraps, sauces and gravy.[7]
