Braising is slow, moist cooking: a tough cut is seared, then simmered partly covered in liquid — stock, wine, soy — for hours until collagen melts into gelatin. It is why short ribs, lamb shanks, oxtail, and pork belly turn spoon-tender, and why braised dishes often taste better the next day.
What to order
- Braised short ribs — beef in red wine or soy-based liquid until falling apart
- Osso buco — veal shank braised with wine and stock, marrow at the center
- Coq au vin — the French benchmark chicken braise
- Hong-shao pork (红烧肉) — Chinese red-braised pork belly, sweet and lacquered
- Lamb shank tagine — North African braise with dried fruit and spices

Frequently asked questions
What is the difference between braising and stewing?
Both are slow, moist methods; braising uses larger pieces partly submerged in liquid, stewing cuts the meat small and covers it fully. A braise is served as a piece, a stew as a spoonable whole.
Why does braised meat get tender instead of dry?
Long, low heat converts collagen — the connective tissue that makes cheap cuts tough — into gelatin, which coats the fibers and gives the sauce body. Lean, tender cuts have little collagen, which is why they are grilled instead.
Is a braised dish a good order at a restaurant?
Usually yes — braises are made ahead and improve with rest, so they show a kitchen’s patience rather than its rush-hour skill. SeEat tags braised dishes on the menu and shows what arrives, sauce and all.
